Fall is upon us. The Harvest Moon Festival coming on Friday, September 29 so moon cake season is nearly here. But before that, I’m thinking about preserving the summer’s bounty. First up is a cherry tomato pickle accented with lemongrass, chile and garlic. It’s my take on Vietnamese pickled eggplant, which is typically made with small, white eggplants called cà pháo trắng.
